Fisherman Sampo Savola brought us the fish for the cookery class. The fish fillets were packed in a box with crushed ice surrounding it that would keep it fresh. It was pike-perch, a local favourite. Sampo is one of the few professional fishermen in Lappajärvi and he works the year around, catching fish and processing them, and also taking care of his farm.
